Limestone Coast Shiraz Cabernet
Viticulture:
Fruit for this wine was sourced from Mt Benson, Robe, Coonawarra and Padthaway - all in the Limestone Coast region in South Australia's southest corner. Winter was cold and exceptionally dry. Only a touch of spring rainfall, coupled with clear skies provided a welcoming boost to vine health and berry size..
Vinification:
Both the Cabernet Sauvignon and Shiraz parcels were fermented in small and large rotary fermenters and the old upright, static fermenters for six to eight days with daily, vigorous, aerative pump-overs. After pressing off the skins, certain parcels were matured in new French and American oak barrels, as well as seasoned oak. There is also an un-oaked component to retain a fresh fruit element. After 18 months maturation, each wine parcel and all barrels were tested by the winemaker and the blend created. The final blend reflects the consistent quality, richness and supple texture of the wine from the Limestone Coast region.
Tasting Notes:
This wine is dark vibrant crimson color with purple hues. Dense dark fruit aromas of dark plum, ripe blackberry and cherry become more complex, elegant and savory, with olive, cassis and leather that intensify the nose. Sweet vanillin and mocha oak characters underpin the wine. The strong, fruit driven palate is supported by cedar and vanillin oak characters and fine silky tannins. These add to the wine's complexity and ensure lingering, ripe fruit flavors on the finish.

Excellent drinking now but will reward careful cellaring for five years.
